For the Marinade:

  • 250 grams paneer, cut into cubes
  • 1 cup thick yogurt (hung curd or Greek yogurt)
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon lemon juice
  • 2 tablespoons gram flour (besan)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon kasuri methi (dried fenugreek leaves), crushed
  • 1 teaspoon chaat masala
  • Salt to taste
  • 2 tablespoons oil or melted butter

For the Vegetables:

  • 1 large onion, cut into chunks
  • 1 large bell pepper (capsicum), cut into chunks
  • 1 large tomato, deseeded and cut into chunks

For Garnish:

  • Fresh coriander leaves, chopped
  • Lemon wedges
  • Chaat masala


Step 1: Prepare the Marinade

  1. Roast the Gram Flour:
    • In a small pan, dry roast the gram flour on low heat until it turns golden brown and gives off a nutty aroma. Set aside to cool.
  2. Mix the Marinade:
    • In a large mixing bowl, combine the yogurt, ginger-garlic paste, lemon juice, turmeric powder, red chili powder, garam masala, cumin powder, coriander powder, kasuri methi, chaat masala, roasted gram flour, and salt. Mix well to form a smooth marinade.

Step 2: Marinate the Paneer and Vegetables

  1. Add the Paneer and Vegetables:
    • Add the paneer cubes, onion chunks, bell pepper chunks, and tomato chunks to the marinade. Gently mix until all the pieces are well-coated with the marinade.
  2. Marinate:
    • Cover the bowl and let it marinate in the refrigerator for at least 1 hour, or preferably overnight for best results.

Step 3: Grill or Bake the Paneer

  1. Prepare for Grilling:
    • If using an oven, preheat it to 200°C (400°F). Line a baking tray with aluminum foil and grease it with a little oil or butter.
    • If using a grill, preheat the grill and lightly oil the grates.
  2. Skewer the Paneer and Vegetables:
    • Thread the marinated paneer and vegetables onto skewers, alternating between pieces of paneer, onion, bell pepper, and tomato.
  3. Grill or Bake:
    • Place the skewers on the prepared baking tray or grill. Brush with a little oil or melted butter.
    • Bake in the oven for 15-20 minutes or grill, turning occasionally, until the paneer and vegetables are cooked through and have a nice char.

Step 4: Serve

  1. Garnish:
    • Remove the tandoori paneer from the skewers and transfer to a serving platter.
    • Garnish with fresh coriander leaves and sprinkle with chaat masala.
  2. Serve Hot:
    • Serve hot with lemon wedges on the side, along with mint chutney or any dip of your choice.

  1. Paneer Quality: Use fresh, firm paneer for best results. Homemade paneer or high-quality store-bought paneer works well.
  2. Marination Time: Allowing the paneer and vegetables to marinate overnight enhances the flavors significantly.
  3. Cooking Method: Tandoori paneer can be cooked in an oven, on a grill, or even on a stovetop griddle (tawa). Ensure even cooking and charring for the best taste.
  4. Variations: You can add other vegetables like zucchini, mushrooms, or baby corn to the skewers for added variety.
