For the Dosa Batter:

  • 2 cups rice
  • 1/2 cup urad dal (split black gram)
  • 1/4 cup poha (flattened rice)
  • 1/2 teaspoon fenugreek seeds
  • Salt to taste
  • Water as needed

For the Egg Mixture:

  • 4 eggs
  • 1 medium onion, finely chopped
  • 1 green chili, finely chopped
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons chopped coriander leaves

For Cooking:

  • Oil or ghee for cooking


Preparing the Dosa Batter:

  1. Soak the Ingredients:
    • Wash the rice and urad dal separately. Soak them in water for at least 4-6 hours.
    • Soak the poha and fenugreek seeds in water for about 30 minutes before grinding.
  2. Grind the Batter:
    • Drain the soaked rice, urad dal, poha, and fenugreek seeds.
    • Grind them together with some water to make a smooth batter. The batter should have a pouring consistency.
    • Add salt and mix well. Let the batter ferment overnight or for about 8-12 hours in a warm place.

Preparing the Egg Mixture:

  1. Whisk the Eggs:
    • In a bowl, break the eggs and whisk them until well beaten.
  2. Add the Veggies and Spices:
    • Add the finely chopped onion, green chili, turmeric powder, red chili powder, salt, and coriander leaves to the beaten eggs. Mix well.

Making the Egg Dosa:

  1. Heat the Pan:
    • Heat a non-stick dosa tawa or skillet over medium heat. Grease it lightly with oil or ghee.
  2. Spread the Batter:
    • Pour a ladleful of dosa batter onto the center of the tawa. Spread it evenly in a circular motion to form a thin dosa.
  3. Cook the Dosa:
    • Drizzle a little oil or ghee around the edges of the dosa. Let it cook until the bottom turns golden brown.
  4. Add the Egg Mixture:
    • Pour a portion of the egg mixture over the dosa. Spread it evenly using a spatula.
  5. Cook Until Done:
    • Let the egg cook until it sets. You can cover the dosa with a lid to help the egg cook faster.
  6. Flip and Cook:
    • Carefully flip the dosa and cook for another 1-2 minutes until the egg is fully cooked and the dosa is crispy.
  7. Serve Hot:
    • Fold the egg dosa and transfer it to a serving plate. Serve hot with coconut chutney, sambar, or any chutney of your choice.


  • If the batter becomes too thick after fermentation, add a little water to get the right consistency.
  • You can add more vegetables like tomatoes, bell peppers, or grated carrots to the egg mixture for added nutrition and flavor.
  • Adjust the spiciness of the egg mixture according to your preference.
