For the Bhindi Masala

  • 500 grams of fresh okra (bhindi)

  • 2-3 green chilies, slit lengthwise
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 2-3 tablespoons cooking oil
  • Fresh coriander leaves, chopped for garnish


Step 1: Prepare the Okra

  1. Wash and Dry the Okra
    • Wash the okra thoroughly under running water. Pat them dry with a clean kitchen towel or paper towel. It is important to dry the okra completely to avoid sliminess during cooking.
  2. Trim and Cut
    • Trim both ends of the okra and cut them into 1-inch pieces. You can slice them into rounds or diagonally as per your preference.

Step 2: Cook the Okra

  1. Sauté the Okra
    • Heat 1-2 tablespoons of oil in a large pan or skillet over medium heat. Add the cut okra pieces and sauté them for about 8-10 minutes, stirring occasionally, until they are slightly browned and cooked through. This helps in reducing the sliminess of the okra.     • Add the finely chopped onions and slit green chilies to the pan. Sauté until the onions turn golden brown.
  3. Add Ginger-Garlic Paste
    • Add the ginger-garlic paste and sauté for another 2-3 minutes until the raw smell disappears.
  4. Add Tomatoes
    • Add the chopped tomatoes to the pan. Cook until the tomatoes become soft and the oil starts to separate from the masala.
  5. Add Spices
    • Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well and cook for a few minutes until the spices are well incorporated and the masala is fragrant.

Step 4: Combine and Cook

  1. Add the Okra
    • Add the sautéed okra to the pan with the masala. Mix gently to coat the okra pieces with the masala.
  2. Cook Together
    • Cover the pan and cook on low heat for about 5-7 minutes, stirring occasionally. This allows the okra to absorb the flavors of the masala.
  3. Finish with Garam Masala
    • Add the garam masala and give a final gentle stir. Cook for another minute and then turn off the heat.

  1. Garnish and Serve
    • Garnish the Bhindi Masala with freshly chopped coriander leaves.
